Yummy Breakfast

Today started a lil earlier than I chose, but that is pretty common. Off, weird and bad dreams for the last 3 days too! Oh well, I figure I can change the way I feel. So off to the kitchen to fix some yummy goodness.

Banana Muffins with Cinnamon Butter

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a oiled muffin pan. Bake for 30 min to 45 min (check with a toothpick to see if done). Cool on a rack. Remove from pan and serve with Cinnamon Butter.

Cinnamon Butter

Ingredients:

  • 4 tablespoons softened butter
  • 2 teaspoons ground cinnamon
  • 2 tablespoons powdered sugar

Preparation:

Blend all ingredients; chill until serving time. Makes about 6 tablespoons.

Weekend Let Down

Well yesterday came and went and I am a lil blue due to it.

Yes, I was glad to have the day with my Dear Hubby but I feel like I let him down.
Now circumstances being what they were it is understandable.
But that does not change my feelings.

Okay, DH's foot had to stay propped up.
And he did enjoy the NCIS marathon too!
I made him homemade banana bread and worked on good meals for him too.
I am glad that he is healing and able to go back to work on light duty for at least one of his two jobs.

But, we did not get to celebrate our anniversary.
And we always make sure to have this time for just us.
No time away from all others this year.
No special dates or dancing all alone or cuddles just the two of us.
Weekend of slow music, seductive food (yeah food can be seductive) or long stretches renewing our relationship.

Just hanging out, being together and letting the weekend flow on by.

New Year's Day Breakfast

For our 1st breakfast of the New Year
we had Banana Bread French Toast.

We used some of my homemade
Banana Bread
that I had left from Christmas.
I made 22 loaves to use as gifts and managed to keep one loaf for us.




And gather you eggs, milk and butter too!


Slice a hefty piece of bread.
Dip it into a mix of whipped egg and milk.
Don't for get to dip both sides.


Then fry up both sides in a pan of hot butter.


We added a rasher of bacon.


And heated up some of my homemade
Banana Pecan Syrup.
This is delicious served warm for your french toast, pancakes and waffles.


And here you have breakfast fit for a Queen.
That would be
me!
