Just Eat Cake

Well we have had some cooler weather thankfully!  I am feeling much much better.  But in the mean time I was thrilled to cook dinner last night.  We had pork tenderloin cooked in a white wine and apple pie spice.  Tender was the correct name for sure.  Along with some home fries and mint creamed peas.  Nice dinner.  But better yet was dessert. 

I chopped up two fresh pineapples yesterday.  I sent the peels over to Other Mom for Pecky the chicken to eat.  She is kind enough to trade us eggs for Pecky food.  I also used the core of the pineapple to flavor my lemonade too.   Just chopped it up and dropped it in the pitcher.  Sweet!  Then I made a homemade pineapple upside down cake.  Oh it was so moist and yummy with the fresh pineapple.  It did crumble into a mess when I flipped it from the baking pan.  But oh, it sure did eat good.  

If you want I will share my cake recipe.  This is just my plain ol cake.....that of course you can tweak into what ever cake you wish to make.

My Every Day Cake

1/2 C Butter
1 3/4 C Sugar
Cream together
Add 2 eggs, 1 at a time. 
 Add 2 1/4 C Flour
3 tsp Baking Powder
1/2 tsp Salt
1 C Milk
1 tsp Vanilla
 Mix Well.   You can the pour and bake or refrigerate.  This will keep for several days.  If I want chocolate cake then I just add cocoa.  Almond.....flavorings.....mint chocolate chip....yes add that in....you choose what flavor you want.  Not hard to do.  Just play with it.  I replaced the milk with cooled strong coffee and added dark cocoa for a wonderful mocha cake.   What flavor can you dream up?  Replace milk with your favorite liquid coffee creamer.  Change out the extract.  Add in fruit or nuts.
